Croquettes
A croquette is a sort of dumpling that is served as a side dish, a snack, or fast food all over the world. It is made of a thick binder coupled with a filling that is breaded and deep-fried.
A thick béchamel or brown sauce, mashed potatoes, wheat flour, or wheat bread are frequently used as binders. A filling may be combined with the binder or packed inside of it; this combination is known as a salpicon. Finely chopped meat, seafood, cheese, rice, pasta, mushrooms, assorted vegetables, and seasonings such herbs and spices are typical fillings. Fruit filling and pastry cream may be used to bind sweet croquettes.
Croquettes can also be made into discs, ovals, and balls.

Ingredients Required
For Chicken
- Oil 2 tbsp.
- onion chopped 1 medium
- Boiled shredded chicken 350gm
- Crushed red chili 1/2 tbsp.
- Garlic powder 1 tsp
- All-purpose flour 2 tbsp.
- Milk 1/2 cup
For Potato
- Boiled potatoes 1/2 kg
- Egg yolk 2
- Green chilies 2
- black pepper 1/2 tbsp.
- salt 1/2 tbsp. or to taste
- Fresh coriander chopped 2 tbsp.
- Cheddar cheese grated 1/2 cup
- mozzarella cheese grated 1/2 cup
- All-purpose flour sifted 1 cup or as required
- Bread Crumbs 1 cup or as required
Cooking Method
- Take a pan and add 2 tbsp. oil , chopped onion and fry until light golden.
- Add boiled and shredded chicken and mix well.
- Add crushed red chilies, garlic powder and mix well.
- Add all-purpose flour , mix well and cook for 2 minutes.
- Add milk, mix well and cook until dries up(2-3 minutes) and let it cool down
- In a bowl , remove egg yolks from egg and set aside for later use.
- In a bowl, add mashed boil potatoes ,add reserved eff yolks , black pepper, green chilies, salt , fresh coriander and mix well.
- Now add cooked chicken mixture, cheddar cheese, mozzarella cheese and mix until well combined.
- Grease hands with oil , take a mixture 45 g and make croquettes of equal sizes (Makes 25) and freeze for 1 hour.
- Now coat Croquettes in all-purpose flour then dip it into beaten egg whites and coat in bread crumbs.
- In a pan ; add oil, heat it and fry croquettes on low medium flame until golden brown. Your Chicken Croquettes are ready to eat.
Suggestion
Can be stored in freezer for up to 1 month.
